Today we are partnering with our friends at ALDI for one of our best summer recipes yet! These Triple Berry Oatmeal Cups are whipped up in no time and made with all of your favorite summertime flavors.

If you’ve been to ALDI, then you know they’ve got deals on deals on deals! You can actually get everything you need for this oatmeal cup recipe at ALDI and for a fraction of the price from other retailers! From fresh, organic produce to organic baking ingredients, ALDI really does have it all. And…high quality sourced items, too! I’m all about that one-stop shop because this girl has totally been to like 5 grocery stores in one day and it is not fun!

Baked oatmeal cups are one of my favorite breakfast recipes because they’re grab-and-go and a better-for-you option for the morning. They’re also a great easy meal-prep recipe for the morning because this recipe gets you 12 total cups! You’re more than welcome to double or triple this recipe if you’re baking for a crowd!

Before we jump into the actual recipe, let’s talk about what you need for these baked oatmeal cups. Now, we’ve got lots of baked oatmeal recipes on FFF, but we LOVE oatmeal cups because they triple as a breakfast, snack, and dessert! This recipe, in particular, is vegetarian, and dairy-free. Here’s what you need…

What You Need for Baked Oatmeal Cups

  • Millville Old Fashioned Rolled Oats
  • ground oat flour (rolled oats, ground into oat flour)
  • Stonemill Ground Cinnamon
  • Blueberries
  • Blackberries
  • Raspberries
  • Banana
  • SimplyNature Organic Cage Free Brown Eggs
  • Stonemill Pure Vanilla Extract
  • SimplyNature Organic Wildflower Honey
  • SimplyNature Organic Unsweetened Almond Milk
  • SimplyNature Organic Coconut Oil

How to Make Oatmeal Cups

Step 1: Prep!

First, preheat oven to 350ºF and spray a muffin tin with non-stick coconut oil spray, and then set aside. You’ll be filling this muffin tin with baked oatmeal goodness in no time 😀

Step 2: Mix Wet Ingredients

Place a ripe banana in a medium size bowl and mash. If you don’t have a super ripe banana, you’ll just need to mash it a little bit more with a fork to get the consistency you’re looking for. After your banana is fully mashed, whisk in eggs, vanilla extract, honey and almond milk until completely combined.

Step 3: Mix Dry Ingredients

Then, in a separate bowl, mix together all your dry ingredients including: rolled oats, oat flour, baking powder, cinnamon and salt.

Step 4: Combine Ingredients

Combine your wet ingredients with your dry ingredients and then add melted coconut oil and mix again. You’ll want to wait to add your melted coconut oil until this step to avoid it hardening into little chunks before all your ingredients are fully mixed together. Finally, add berries and mix until combined.

Step 5: Fill Those Muffin Tins

Transfer the batter into your muffin tin, making sure to fill each muffin cup to the top.

Step 6: Bake

Bake at 350ºF for 18-20 minutes. While your oatmeal cups are baking, start to consider what you’re going to store them in! These beauts will store for up to 5 days in an air tight container in the fridge, making it easy peasy for you to grab one and go ever morning throughout the week. If you’re looking to keep these for a little longer, feel free to store them for up to 3 months in an air tight container in the freezer.

Step 7: Enjoy Your Baked Oatmeal Cups!

Serve these baked oatmeal cups to a crowd, or store them in the fridge or freezer for a grab and go option any time.

Ingredients

Wet

  • 1 medium ripe banana 1/2 cup
  • 2 large SimplyNature Organic Cage Free Brown Eggs
  • 1 teaspoon Stonemill Pure Vanilla Extract
  • 1/4 cup SimplyNature Organic Wildflower Honey
  • 1/2 cup SimplyNature Organic Unsweetened Almond Milk
  • 1 tablespoon SimplyNature Organic Coconut Oil melted

Dry

  • 2 cups Millville Old Fashioned Rolled Oats
  • 1/2 cup ground oat flour Millville Old Fashioned Rolled Oats, ground into oat flour
  • 1 teaspoon Baker’s Corner Baking Powder
  • 1 teaspoon Stonemill Ground Cinnamon
  • 1/2 cup blueberries
  • 1/2 cup blackberries
  • 1/2 cup raspberries
  • Pinch of salt

Instructions

  • First, preheat oven to 350ºF and spray a muffin tin with non-stick coconut oil spray. Set aside.

  • Place a ripe banana in a medium size bowl and mash. Then, whisk in eggs, vanilla extract, honey, and almond milk.

  • Then, in a large bowl, mix together rolled oats, oat flour, baking powder, cinnamon, and salt.

  • Combine wet ingredients with dry ingredients and then add melted coconut oil and mix again. Finally, add berries and mix until combined.

  • Transfer batter into muffin tin, filling each muffin to the top.

  • Bake at 350ºF for 18-20 minutes.

Tips & Notes

  • Store in an airtight container in the fridge for up to 5 days OR freeze for later for up to 3 months.

I’ve been making these for years! Such a handy breakfast on the go. I like to warm them up and top them with a scoop of Greek yogurt and berries. They freeze well too!

These are DELICIOUS!! I used fresh strawberries instead of blackberries, frozen blueberries and raspberries (thawing for an hour), and a frozen banana. I also made these into mini cups since I am wanting these for a snack. I baked the first batch for 10 mins and they were a little under done, so I baked the second batch for 12 mins. Makes 25 minis 😊

These are great! I didn’t find them too plain. Perfect for ppl like me who don’t have a big apatite for breakfast in the morning. I substituted frozen berries, regular milk and regular flour, and they still turned out well! I also didn’t have coconut oil spray, so I just melted a little extra coconut oil and brushed it in the cups of the tin.

These do not suit my taste. They are indeed calorie cutters because I don’t want to eat them.
Barely any flavor, unless u bite a berry. Not my cup of tea.
